Along with poolside bar Tangerine, lobby lounge Stir, and the grab-and-go option of Grounds, the new hotel will feature a signature Mediterranean-inspired restaurant called Amare, that promises to underline the upscale dining credentials of sister hotel duo, the Walt Disney World Swan and Dolphin.

Amare, which means “to love” in Italian, takes its culinary creativity from the tastes and cultures of the Mediterranean, focusing on fresh premium ingredients from the area, including an array of fine seafood, citrus, olive oils, pastas, and pitas. It will also feature an extensive wine list direct from the region, with the option for specialized flights and other wine selections.

Luciano Sperduto, the Walt Disney World Swan and Dolphin director of food and beverage, explained: “At Amare, our guests experience a journey to the Mediterranean region through their palates. It’s a region with such a rich history of food, with so many great flavors to feature. The concept gave our culinary team an opportunity to really flex their creative muscles. There are great options for everyone to love.

Some of the new restaurant’s menu highlights will be:

Breakfast: as well as a buffet and breakfast bowls, a la carte items will include Eggs Au Cheval (two farm-fresh eggs, seared medallions of angus beef tenderloin, sauce bearnaise, and house breakfast potatoes).

Lunch: salads, flatbreads, and entrees, including grilled mahi-mahi with lemon, Tuscan kale, and Spanish caper emulsion.

Dinner: appetizers include hearth-fired Tiger prawns and charred octopus, while entrees feature sea bass al cartoccio, and hand-made Turkish manti dumplings filled with baharat-spiced lamb, cauliflower, roasted eggplant, tomato, and yogurt sauce.

Dessert: pistachio caragli (rolled baklava), Greek yogurt cheesecake, and Meyer lemon panna cotta.

At Tangerine, guests can enjoy signature drinks poolside along with casual fare, including flatbreads, salads, burgers, and sandwiches, and stay cool with the restaurant’s signature popsicle – tangerine flavored, of course.

Grab-and-go outlet Grounds will feature craft coffees, sandwiches, pastries, and more, while Stir offers an airy, tropical feel in the lobby, where specialty cocktails and light bites are served, notably a Chef’s Selection of handcrafted salamis from Spain and Italy, as well as special food and drink pairings daily.

As a nod to the region’s rich citrus history, all four venues will feature citrus-inspired menu items for entrees, desserts, and cocktails. The quartet also take the full Walt Disney World Swan and Dolphin hotel complex to 22 dining venues, highlighting food and beverage programs that continually earn national recognition, along with their highly acclaimed Food And Wine Classic, which is back this year from October 29-30.
