Beatrix land at Disney Springs to return to green space until construction restarts

After being announced for Disney Springs in 2019, Chicago-based restaurant Beatrix is now officially postponed as a result of the pandemic delaying construction.

The restaurant, developed by Lettuce Entertain You Enterprises, is planned to be developed at Disney Springs West Side, in the former location of Bongos Cuban Cafe. Despite recent reports, the project has not been canceled, but simply postponed.

“As a result of the pandemic, Disney and Beatrix have agreed to delay the start of construction. During the postponement, rather than leave the site a construction zone, it was also agreed that the property would be returned to green space until the project is restarted,” said a spokesperson from Lettuce Entertain You. “We look forward to our opening and will certainly share updates when we have them.”

This isn’t the first new addition to Disney Springs West Side to encounter setbacks as a result of the pandemic. Ample Hills Creamery was slated to open a second Walt Disney World location just across the walkway from Beatrix, but that project was canceled after the ice cream chain filed for Chapter 11 bankruptcy in March 2020; Ample Hills’ location at Disney’s BoardWalk Resort closed just a few days later. Construction walls in the area are still up, though they no longer advertise the previously-planned ice cream establishment.

For now, it seems Disney guests will have to wait for this “healthful” Chicago staple to make its way to the Most Magical Place on Earth.
