Located in the Dolphin (replacing the current restaurant Fresh Mediterranean Market), Rosa Mexicano will offer an elevated dining experience. The menu features modern interpretations of authentic Mexican cuisine, including chicken flautas topped with shaved cabbage, crema, queso fresco, and tomatillo-avocado salsa; birria quesatacos made with queso Oaxaca, cilantro, and onions, with consommé dip in corn tortillas; and the signature guacamole tasting flight featuring bacon and cotija guacamole with applewood smoked bacon, crumbled cotija cheese, and chile de árbol; grilled pineapple pico de gallo, guacamole with cilantro, red onion, habanero, and fresh lime; and lump crab meat a la Mexicana guacamole with tomato, onion, cilantro, serrano, and fresh lime.

“Rosa Mexicano is the perfect partner to enhance our current dining options,” said Walt Disney World Swan and Dolphin Area General Manager Sean Verney. “We pride ourselves on offering the best quality restaurant experiences for our hotel guests – as well as local Orlando residents – and Rosa Mexicano delivers on that promise. We’re excited to be home to their first Florida location, starting in early 2023.”

The menu at the new Orlando location will also showcase the restaurant’s award-winning margaritas, including the signature frozen pomegranate margarita that was named the best in New York City.
