Summer House on the Lake full-service restaurant coming to Disney Springs

Summer House on the Lake, a full-service restaurant concept by Lettuce Entertain You, will open at Disney Springs in Walt Disney World in 2023, with a California-inspired menu and a beachy vibe.

Simplicity and sustainability are key ingredients in the Summer House recipe, as is a breezy style reminiscent of a beach house, if beach houses had a tempting menu, an in-house bakery, and an extensive wine and handcrafted cocktail list.

“Lettuce Entertain You is thrilled to be working with Disney to bring Summer House to Disney Springs,” said R.J. Melman, president of Lettuce Entertain You. “Disney is a company we’ve long admired and we’re excited about this upcoming project.”

Chicago-based, family-owned Lettuce Entertain You previously announced the intended construction of Beatrix restaurant at Disney Springs, a project that was put on hold due to the pandemic. Summer House on the Lake will replace Beatrix in the same location, the site of the former Bongo’s Cafe.

The Summer House franchise has two existing locations – Chicago, Ill. and North Bethesda, Md. – making Disney Springs its third branch.

Menu items at the existing locations include Malibu Peanut Noodle Salad, JL’s Soft Shell Crab Sandwich, Ahi Tuna & Watermelon Tartare, and Blue Cheese Peppercorn Burger, plus pie, cake, and other desserts. Pasta, pizza, wood-grilled selections, tacos, and fish dishes also feature.
