Dole celebrates Disney’s 100th with Top 10 Disney-inspired recipes

Dole and Disney have worked together since 2016 to make healthy eating more fun for kids and families, so in honor of The Walt Disney Company’s Centennial celebration, Dole is reissuing its Top 10 Disney-inspired recipes, including the recipe for Dole Whip.

The partnership between Disney and Dole dates back to the sponsorship of “Walt Disney’s Enchanted Tiki Room” at Disneyland in 1976, followed by the debut of the iconic Dole Whip in 1984. Since then, Dole and Disney have teamed up for healthy-eating initiatives themed to Disney, Pixar, Marvel, and Star Wars films, as well as milestones and special events.

In honor of the 100th Anniversary of The Walt Disney Company, here are Dole’s Top 10 Disney-inspired recipes:

10. Winter Solstice Soup for “Frozen 2”

Ingredients:

  • Two tablespoons olive oil plus additional for garnish (optional)
  • Two medium white onions, chopped
  • Six stalks of celery, chopped
  • Two medium carrots, chopped
  • 2 cups small cauliflower florets
  • One large sweet potato, peeled and chopped
  • One medium celery root, chopped
  • 7 cups unsalted vegetable stock
  • ½ cup plus two tablespoons chopped hazelnuts
  • One tablespoon of brown or yellow mustard seeds (optional)
  • 1½ teaspoons salt
  • Fresh thyme leaves for garnish (optional)

Directions:

  1. Heat oil in a large sauce-pot over medium-high heat
  2. Add onions and cook for 5 minutes or until tender, stirring occasionally.
  3. Add celery, carrots, and cauliflower; cook 10 minutes or until starting to brown, stirring occasionally.
  4. Add sweet potato, celery root, and stock; heat to a simmer.
  5. Reduce heat to medium-low; cover and cook for 45 minutes or until vegetables are very tender.
  6. Toast hazelnuts in a small skillet over medium-low heat for 3 minutes or until lightly browned and fragrant; add mustard seeds, if using, and cook for 2 minutes or until mustard seeds start to pop, stirring frequently.
  7. Purée soup in batches in a blender on high for 1 minute or until smooth; transfer back to sauce pot and stir in salt. Makes about 10 cups.
  8. Serve soup topped with hazelnut mixture garnished with oil and thyme, if desired.

Note: To freeze, cool puréed soup in a sauce pot in a sink filled with ice water. Divide soup into freezer-safe containers and freeze for up to 3 months. Thaw soup overnight in the refrigerator, cover, and reheat on the stovetop (or in a microwave-safe dish in the microwave oven on high) until the internal temperature reaches 165°F. Prepare the toasted hazelnut mixture before serving.

9. Te Fiti Fudgy Coco Cake Pops to celebrate Disney Princesses (Moana)

Ingredients:

  • One banana, peeled
  • 1 cup pitted dates
  • ½ cup almond flour
  • Three tablespoons of sunflower butter
  • Two tablespoons unsweetened cocoa powder plus additional for dusting (optional)
  • ¼ cup gluten-free and vegan dark chocolate chips
  • ¼ cup unsweetened coconut flakes
  • 16 cake pop sticks

Directions:

  1. Line a rimmed baking pan with parchment paper.
  2. Pulse banana, dates, flour, sunflower butter, and cocoa powder in a food processor until smooth, scraping down the bowl occasionally.
  3. Add chocolate chips and coconut; pulse until incorporated.
  4. Transfer banana mixture to a medium bowl; freeze for 20 minutes or until firm.
  5. Form banana mixture into 16 (1½-inch) balls (about 1½ tablespoons each); insert cake pop sticks into the center of balls.
  6. Transfer cake pops to the prepared pan; freeze for 1 hour.
  7. Serve frozen and dusted with cocoa powder, if desired. Makes 16 cake pops.

8. Shrimp and Pineapple Thingamabobs to celebrate Disney Princesses (Ariel)

Ingredients:

  • 1 pound raw 21-25 count tail-off peeled and deveined shrimp, thawed if necessary
  • One large egg
  • ½ cup whole wheat panko breadcrumbs
  • ¾ teaspoon paprika
  • ¼ teaspoon kosher salt
  • ¼ teaspoon ground black pepper
  • One garlic clove, minced
  • ½ medium shallot, finely chopped
  • ¼ cup chopped red bell pepper
  • Nonstick cooking spray
  • ¼ pineapple, peeled, cored, and sliced  ½-inch-thick crosswise
  • Eight large romaine lettuce leaves, trimmed
  • One avocado, peeled, pitted, and thinly sliced

Directions:

  1. Prepare an outdoor grill for direct grilling over medium-high heat.
  2. Pulse shrimp, egg, breadcrumbs, paprika, salt, and black pepper in a food processor until almost smooth with some coarse pieces remaining, scraping down the bowl occasionally; transfer to a large bowl and fold in garlic, shallot, and bell pepper.
  3. Form shrimp mixture into 4 (¾-inch-thick) patties; spray both sides with nonstick cooking spray.
  4. Place burgers on the hot grill rack; cover and cook for 8 minutes or until internal temperature reaches 145°F, turning once.
  5. Spray both sides of the pineapple with nonstick cooking spray; place on the hot grill rack, cover, and cook for 4 minutes or until grill marks appear, turning once.
  6. Place 2 romaine leaves, side by side, on a work surface with long ends facing you; place ¼ avocado, ¼ pineapple, and one burger in the center of the leaves. Fold sides of leaves over filling; place, seam side down, on serving plate.
  7.  Repeat with remaining leaves, avocado, pineapple, and burgers to make three more burgers.

7. Glass Slipper Veggie Tea Sandwiches to celebrate Disney Princesses (Cinderella)

Ingredients:

  • ¼ cup raw cashews 
  • Two green onions, thinly sliced
  • One radish, chopped
  • ½ small carrot, peeled and chopped
  • ¼ cup small cauliflower florets
  • Two tablespoons of fat-free cream cheese
  • ½ teaspoon kosher salt
  • Eight slices of whole-wheat bread
  • 1/6 English cucumber, halved lengthwise and thinly sliced crosswise

Directions:

  1. Combine cashews and enough hot water to cover in a small bowl; let stand for 30 minutes, then drain.
  2. Pulse onions, radish, carrot, cauliflower, cheese, salt, and cashews in a food processor until smooth.
  3. Cut 16 glass slippers out of bread slices using a (4-inch) glass slipper or high-heeled shoe-shaped cookie cutter. 
  4. Spread the onion mixture on eight glass slipper pieces; top with cucumber and the remaining eight glass slipper pieces.

Note: If serving adults, add a dash of ground cayenne or ¼ cup chopped jalapeño peppers to the food processor.

6. Mike Wazowski Fruit Stack for Disney and Pixar’s “Monsters, Inc.”

Ingredients:

  • Two kiwis, peeled and cut in half lengthwise
  • 1/2 kiwi, peeled
  • Four oval pineapple slices, about 3 inches in diameter, cut out with an oval cookie cutter
  • Four large oval slices of green melon/honeydew melon, about 4 inches in diameter
  • 1 peeled 1-inch slice of dragon fruit
  • 16 almond slivers
  • One horned melon
  • 4 dried unsweetened blueberries

Directions:

  1. Place kiwi ovals upside down on each oval pineapple slice to resemble Mike’s head.
  2. Place each pineapple sliced on a melon oval on a plate.
  3. Scoop out four balls from the dragon fruit slice with 1/4 tsp for Mike’s l bulging eyeball (snack on scraps).
  4. Place each dragon fruit eyeball on the top third of the kiwi. Add a dried blueberry to form the pupil.
  5. With a sharp paring knife, trim half the kiwi into Mike’s dangly legs and arms and add to the sides and bottom of the kiwi, draped over the pineapple. Add two almond slivers to each kiwi to form the smiling mouth and two more almond slivers protruding from the top of Mike’s head for his horns.
  6. Scoop out horned melon and drizzle around Mike directly onto the plate.

5. Tatooine Blue Milk for “Star Wars: The Last Jedi”

Ingredients:

  • 1 cup unsweetened lite coconut milk
  • 1-½ bananas, peeled and sliced
  • One tablespoon of maple syrup
  • ¼ teaspoon ground cinnamon
  • ¼ teaspoon vegan blue food coloring
  • 1 cup ice cubes

Directions:

  1. Combine coconut milk, bananas, maple syrup, cinnamon, food coloring, and ice in a blender.
  2. Cover; blend until smooth.

4. Frozen Fighter Pops for “Star Wars: The Last Jedi”

Ingredients:

Green Light Sabers

  • 1 cup green grapes
  • 1/2 cup baby spinach
  • 1 cup water
  • One tablespoon honey

Purple Light Sabers

  • 1 cup blueberries
  • 1 cup blackberries
  • 1 cup water
  • One tablespoon honey

Red Light Sabers

  • 1/4 cup raspberries
  • 1-1/2 cups strawberries
  • 1 cup water
  • One tablespoon honey

Yellow Light Sabers

  • 2 cups pineapple
  • 1 cup water
  • One tablespoon honey

Directions:

  1. For each color, combine ingredients in a blender.
  2. Cover; blend until smooth.
  3. Pour mixture into popsicle molds ¾ of the way to the top.
  4. Freeze for 6 hours or overnight.

3. Steamboat Willie Green Apple Waldorf Salad to celebrate Mickey’s 90th Anniversary

Ingredients:

  • 3/4 cup fat-free Greek yogurt
  • Two teaspoons of Dijon mustard
  • 16 oz. chopped, cooked chicken
  • 1 cup blueberries
  • 1 cup red grapes, cut in half
  • 1 cup chopped, fresh pineapple
  • 1/2 cup celery, cut into chunks
  • One tablespoon of freshly chopped mint
  • One pkg. (5 oz.) 50-50 Salad Blend
  • 1/4 cup chopped pecans or walnuts (optional)
  • 1 cup chopped green apple

Directions:

  1. Stir together yogurt and mustard in a medium bowl.
  2. Stir in chicken, apples, blueberries, pineapple, celery, and mint. Toss to coat evenly.
  3. Poursalad blend on a serving platter, arrange chicken mixture over salad, and sprinkle pecans, if desired.

Note:Can be served as a salad or spooned onto tortillas and rolled up for a sandwich.

2. Gosh-Golly-Gee PB&J Smoothie to celebrate Mickey’s 90th Anniversary

Ingredients:

  • 1 cup strawberries
  • One medium-ripe banana
  • 1/2 cup nonfat Greek yogurt
  • Two tablespoons of maple syrup
  • 1.5 tablespoons creamy peanut butter
  • 1/8 teaspoon kosher salt
  • 1 cup ice
  • Two teaspoons coarsely chopped unsalted dry-roasted peanuts

Directions:

  1. Combineall ingredients except peanuts in a blender.
  2. Cover; blend until smooth.
  3. Topsmoothies with chopped peanuts, and serve.

1. Do-It-Yourself (DIY) Dole Whip

Ingredients:

  • 1 cup ripe pineapple, chopped and frozen 
  • One ripe banana, peeled and frozen 
  • 2-1/2 teaspoons powdered sugar 
  • 1/2 cup unsweetened coconut milk
  • One teaspoon of lime juice

Directions:

  1. Combine all ingredients in a blender or food processor.
  2. Cover; blend until smooth, about 2-3 minutes.
  3. Garnish with fresh pineapple and serve immediately.

Note: For best results, freeze fruit in airtight containers.
